Mushrooms Alfredo

A veganised recipe for an old favourite; Alfredo Sauce. With mushrooms!

1 tbsp butter
3/4 cup mushrooms, chopped or diced
2 cloves garlic, crushed
1 tbsp cornflour (corn starch)
1/2 cup soy milk
1 tbsp vegan parmesan
Chopped parsley
Salt
Pepper

Melt butter in a saucepan over medium heat.
Add mushrooms and simmer for a minute until mushrooms start to soften.
Add garlic and simmer for another minute, stirring constantly to stop garlic from burning.
Add cornflour and stir until no large lumps remain.
Pour in soy milk slowly, stirring as you do.
Keep stirring, sauce should start to thicken. If it thickens too much, add more milk until it is the desired consistency.
Add parmesan and stir. You can add more/less to taste.
Just before serving, stir in parsley, salt and pepper to taste.

Notes:
-Great on pasta, or toasted ciabatta bread.
-Mushroom step can be removed if you don't like them; it still makes a good sauce.

  1. Thanks for posting AeryFairy. Is 1 Tbsp of vegan Parmesan sufficient to infuse the necessary cheese taste into this dish? But, then again, it appears to be a most perfect portion size of Alfredo sauce.

  2. I found 1 tbsp to be sufficient, as this makes a reasonable-sized individual portion. It wasn't overpowering, just had a nice cheesy tang to it. I started out with about half that amount and just continued adding it until it tasted right for me. I was using the parmesan I mentioned in my previous post (Life Free-From).

  3. Hello AeryFairy,
    I am not a huge fan of mushrooms, so any sauce to enhance them is appreciated. I have to add that i am a vegetarian and always happy to try vegan products. I like the vegan Worcester sauce and have been using it for a long while, but not the vegan Parmesan cheese. I won't be subbing it for the real thing though as I know it is not veggie friendly, but i have found a 'vegetarian alternative Parmesan cheese', so in a round about way, this is me saying i am going to give this a go one of these days.
